Reasonable people will inevitably disagree about what's "authentic" or "genuine" or even "real." Not so when it comes to Thai Siam's food, which is as close to "of or relating to Thailand and its peoples" as you're going to get in the Bible Belt. Their Pad Thai is not made from ketchup and the spiciness is not a condiment you add at the table. The food is inexpensive; the decor is modest and beside the point. Though the Lawrence restaurant opened in the fall of 2004, the owners have operated a Thai restaurant (Parsons, Kan.) for 13 years. Thai Siam also serves several common Chinese/American dishes like General Tso's Chicken and Crab Rangoon.
